A Dead name' is the name that a transgender person was given at birth and no longer uses upon transitioning. So 'dead naming' is the act of calling a trans person by their birth name, which they no longer use. This is a form of hate speech and transphobia and can be detrimental to their mental health, so make sure you are mindful of how you address people.
